which are commercially available (Smith et al., 2004). Ethanolvapor-generating sachets are widespread in Japan and are mainly
used for high moisture bakery goods, fish products and cheese.
Studies reporting considerable shelf-life extensions with ethanol
vapor-generating sachets for a number of foods have been reviewed
(Vermeiren et al., 1999). For example, a 5–20-fold extension in
mold-free shelf-life has been observed for cakes with high water
content depending on the size of ethanol vapor-generating sachet
