2.3.4. Nitric oxide scavenging activity
Nitric oxide scavenging activity was measured using the Griess
Illosvoy reaction (Garratt, 1964); olive oils with IM < 2, for the
2012/2013 crop season were used. To a solution of 40 mM phosphate
buffer saline (pH 7.0, 0.15 ml) and MeOH (0.10 ml) were
added a methanolic solution of the olive oil (5.6 mg/ml, 50 ll)
and a 10 mM solution of sodium nitroprusside in buffer (0.4 ml).
The control solution was prepared using pure MeOH (50 ll)
instead of the sample.
