Overall, the doubling-time concentration correlated well with DPPH and peroxyl radical-scavenging activities, as well as total phenolics. Because the variations i doubling concentration and DPPH radical-scavenging activity were significantly larger than the other two parameters, the data were thus converted to logarithms. High correlation coefficients of 0.967, 0.928, and 0.945 were obtained for DPPH radical-scavenging activity versus concentration, peroxyl radical-scavenging activity versus concentration, and total phenolics versus concentration, respectively. Consequently, phenolic compounds contributed mostlybnot only to antioxidant activities, but also to inhibitory effects against LDL oxidation.
