Weight loss of osmotically dehydrated and CaCl2 infused purple sweet potatoes are shown in Figure 1. The results showed that weight was continuously decreased in the samples during storage at both temperature (RT & 4˚C). Weight loss in the potatoes was ranged from 11.29 to 19.92%. The different temperature storage was significantly influenced the weight loss in osmotically dehydrated potatoes. The samples stored at room temperature was losing the weight more quickly than 4˚C. Weight loss was increased gradually throughout the storage under low temperature. However, the low-temperature storage was controlled of moisture loss better than room temperature. Osmotically Dehydrated purple sweet potatoes could able withstand for 25 days under low-temperature storage. Whereas, room temperature storage was not successful on extending the shelf life (10 days) of potatoes due to microbial growth (see Figure..).
