The aim of the present study was to investigate the
glycemic and insulinemic effects of human and bovine
milk in comparison with white wheat bread (WWB). In
addition, casein and whey protein fractions from bovine
milk were included. For this purpose, human milk, bovine
milk, bovine casein and whey proteins, respectively,
were standardized with respect to lactose content and
provided as breakfast drinks to healthy adults. The study was performed in a glycemic index measuring setting,
and a carbohydrate equivalent amount of white wheat
bread (WWB) was therefore used as reference meal. In
addition to blood glucose and insulin, plasma levels of
amino acids and the incretins GIP and GLP-1 were measured
in the postprandial phase
