Mean values of amino acids content of date flesh and
concentrated syrup extracted by microwave
Table 3 shows the amino acids content of date flesh and date
syrup extracted and concentrated by microwave method. The
date flesh contained (175.86 mg/100 g dry date) sulfur containing
amino acids, and (523.22 mg/100 g dry date) total essential
amino acids, compared with the extraction by microwave method
that contained (172.05 mg/100 g dry date) sulfur containing
amino acids, and (509.25 mg/100 g dry date) total essential amino acids. Similar results are found with other types of dates
(Al-Shahib and Marshall, 2003; Gad et al., 2010).
