The microbiological analysis of the control, probiotic, and
symbiotic formulations evaluated throughout the storage period
showed the absence of Bacillus cereus, thermotolerant coliforms/g
(45 C), coagulase positive staphylococci/g, Salmonella spp, molds
and yeasts. These formulations are in compliance with the current
regulation, satisfy sanitary-hygienic conditions (ANVISA, 2001),
and are safe for human consumption.
