Nutrient composition
of the SBM and FSBM used in this study is shown
in Table 1. Amino acid composition was measured by
HPLC as described in Mateo et al. (2007b). Glycinin
and β-conglycinin concentrations were measured as
described by Panthee et al. (2004). Briefly, fractions
of proteins were extracted as described by Bradford
(1976), and each fraction of proteins was further separated by SDS-PAGE, followed by measuring the density
of each band. Phytic acid concentration was measured
by a modified colorimetric method using crude acid extracts from each ingredient, as described in Gao et al.
(2007).
