Three inoculants were used for mezcal production by fermenting and distilling 8 L of agave juice: mezcals 75Sc/25Td(75% S. cerevisiaeITD-00185 and 25%T. delbrueckiiITD-00014a), 100Km (100%K. marxianusITD-00147), and 100Sc(100%S. cerevisiaeITD-00185). Volumes of mezcal obtained from 8 L of agave juice were 1.26 L for mezcal 75Sc/25Td, 1.12 L for mezcal 100Km, and 0.93 L for mezcal 100Sc. Approximately 1 kg of agave was needed to obtain 1 L of juice with a sugar concentration of 120 g/L. These data were used to calculate the yields (kg of agave/L of mezcal) for each mezcal produced. Yields showed inTable 4are within the previously reported range of 6e9 kg of agave per liter of mezcal (SotoGarcía et al., 2009), and are comparable to the range for tequila production reported bySalda~ na (2010)of 5e7 kg of agave per liter of tequila. All produced mezcals had ethanol, methanol, higher alcohol, acetic acid, and dry extract concentrations (Table 4) that met the specifications of Mexican Official Norm (NOM-070-SCFI-1994) and were comparable with previously reported concentrations (De Le on-Rodríguez et al., 2006; Soto-García et al., 2009).
