Lactic acid bacteria are food grade
organisms, possessing the generally- recognized-as-safe (GRAS) status, and can secret
exopolysaccharide (EPS). LAB EPS is economically important because it can impart functional effect
to foods and confer beneficial health effects to the consumer (Welman and Maddox 2003; Tallon et
al. 2003). EPS produced by LAB is the subject of an increasing number of studies,
since EPS- producing LAB have become an alternative way of improving the texture and stability
of fermented dairy and non-dairy products. It is therefore essential to isolate LAB species as well
as conduct more research into the metabolites produced by them in order to get overproducing
strains and to meet the demand of EPS production in industries. This research aimed at isolating
lactic acid bacteria from fermented food and screening them for bio-
molecules production.
