Fig. 6 shows the profile of bromelain inactivation with respect
to time in aqueous solution at various temperatures. The solid lines
shown in the figure were calculated from the parameters obtained
by nonlinear regression analysis according to a first-order kinetic
expression. The kinetics of inactivation can be described by firstorder
rate equation as dA/dt = −kA.Where A is the relative activity of
enzyme and k is the rate constant (min−1). The thermal inactivation
is not at all a physical destruction of the materials, but the whole
process is obviously a set of elementary reactions, which altogether
represent the mechanism of the overall reaction. Approximating
the experimental data, the temperature effect on inactivation rate
may be described similarly to the kinetics of chemical reactions by
the Arrhenius type of equation: k = k0 exp(−E/RT), where k0 is the
