In
this sense, the higher a* of the sample of BF7 could be related to the
lower fat content (Table 3) of this formulation and also low value of
a* for tomato pomace. Moreover, value for saturation index (C*) was
significantly higher (p b 0.05) for sample containing 7% (w/w) tomato
pomace (BF7) indicating a higher redness than control sample, while
there was no significant difference (p N 0.05) in the hue angle between
treatments and control.
