Moisture content of different biopolymer coated calcium fortified
rice premix samples was 7.9 ± 0.9 to 8.29 ± 0.07% (w.b.)
(p > 0.05). Colour quality of biopolymer coated calcium fortified rice
premix was found dependent on type of coating material as well as
their level in coating solution (Table 3). L values (59.29 ± 1.09 to
65.57 ± 0.89) were affected by both the parameters i.e. type of
coating material as well as their level in coating solution but a
values (2.27 ± 0.09 to 2.75 ± 0.75) were found unaffected with the
concentration of biopolymer in coating solution. No significant
difference was observed in the b values (12.40 ± 4.22 to
14.56 ± 0.30) and Yellowness index (46.37 ± 1.03 to 52.30 ± 1.04) of
different biopolymer coated calcium fortified rice premix samples
(p > 0.05). Mean comparison by LSD results indicated significantly
lower L values and lower colour difference on the basis of uncoated
calcium fortified rice premix. Whiteness index of zein coated calcium
fortified rice premix was relatively lower than other
biopolymer coated premix samples.
