In conclusion, including the studied genes, especially SCD, DGAT2,
MTTP and FASN polymorphisms in the selection schememight improve
carcass quality of heavy pigs. According to the production scopes, fresh
meat and/or dry-cured ham production, we would suggest to choose
the SCD heterozygous as well as the DGAT2 and MTTP (the only mutation
of this study to induce an amino acid change) heterozygous in
order to increase carcass weight. Instead, the DGAT2 heterozygous as
well as MTTP and FASN homozygous are interesting in reducing weight
loss during salting and therefore increasing ham production yields.
