2.3.1. Determination of moisture and oil content The moisture content of the poori was determined by drying the sample in a hot air oven at 105 ◦C for a period of 24h (AOAC, 1980). The oil content was estimated by drying the samples at
105 ◦C for 24h followed by soxhlet extraction with petroleum ether (AOAC, 1980). Oil content was expressed on dry weight
basis as % of total oil content. All experiments were carried out in triplicates and average values were presented.
