On Clean Monday, which is the first day of lent in the Greek Orthodox Church, the lagana is the centerpiece of a traditional meal of seafood and salads. Clean Monday is so-called because on this day Greek housewives are expected to scrub the kitchens and all utensils, to make sure nothing remains of Celebration-the three -week long festival that precedes the fasting of Lent. Appropriately . the lagana iss completely plain unleavened bread, made by local bakers solely for this one day of the year. The dough is formed into a large oval and then sprinkled with sesame seeds before baking. Tsoureki is the famous Greek Easter bread. The veasted bread is made from an enriched dough flavored with orange and spices . It can be coiled into a round, but is more frequently made into a long braid and then sprinkled with almonds and sesame or caraway seeds and decorated with the characteristic red hard-boiled eggs. If youvisit Greece just before Easter, you will find packets of red-dyed eggs sold everywhere. They symbolize the Resurrection and are knocked together after the Midnight Mass on EasterSaturday evening with the words, "Christ is Risen." On many of the Greek islands, where old custons still continue, tsoureki is the traditional Easter gift from children to their godparents. Another festive and enriched bread isthe christopsomo, the greek christmas bread. the top is decorated with a large cross , fashioned from the dough, the ends of which encircle cherries or walnuts
