The inhibitory effects of lemon juice, vinegar and the mixture of
lemon juice and vinegar (1:1) on the inoculated carrots (approximately
6 and 3 log CFU/g) with S. Typhimurium were investigated
and it was detected that the treatment of carrot samples with
lemon juice alone for different exposure times caused significant
reductions ranging between 0.79 and 3.95 log CFU/g
