In this experiment,
the rates of the reaction for individual antioxidants differed substantially.
Based on the speed at which plateau was reached, antioxidant
compounds were classified as: (i) Fast kinetic such as
ascorbic acid, (ii) intermediate kinetic such as Trolox, or (iii) slow
kinetic antioxidants such as ferulic acid. For fast kinetic antioxidant,
the reaction was completed by more than 90% in less than
1 min.
