The spoilage in fresh-cut fruit and vegetables is usually detected
by consumers when aerobic microorganisms, yeasts and molds on
the fresh-cut fruit reach levels above 7 log (CFU/g) and 5 log (CFU/
g), respectively (Jacxsens, Devlieghere, & Debevere, 1999).
