4. Conclusion
In summary, the influences of hydrophilic antioxidants, metal chelators, and food grade emulsifiers on the oxidative stability of base algae oil and water-in-algae oil emulsion were investigated by monitoring the formation of propanal during storage. GTE and AA, which showed strong ability to protect endogenous α-tocopherol against oxidative degradation, are the most efficient hydrophilic antioxidants to restrain algae oil oxidation. PC 75 and Lyso-PC contain significant amount of α-tocopherol and act as the antioxidants in base algae oil. GSE, GSE-p, and a metal chelator only render protection for w/o emulsions stabilized by PGPR. The present study adds valuable information on PUFA protection by protecting the degradation of tocopherols in base algae oil or chelating transition metals in water-in-algae oil emulsions.
