3.6. Reaction and fate in food
The xylanase catalyses the hydrolysis of 1,4-β-D-xylosidic endo-linkages in xylan (including
arabinoxylan, which is xylan branched with arabinose) resulting in the production of (1→4)-β-D-xylan
oligosaccharides of different lengths and xylose.
