Apple darkening resulting from an addition of SH extract to pullulan coating was reflected in a decrease in the value of the L* parameter. Moreover, a significant decrease (p < 0.05) in the value of the a* color parameter was noted for apples coated with pullulan coating both with and without addition of SH extract. No significant differences (p > 0.05) in the values of L* and a* parameters were noted compared to initial values.
