The phytochemical
compositions and concentrations vary significantly depending
on the kernel colour. Specifically, waxy corns have various
kernel colours, including white, yellow, purple and black. Moreover,
the pigmented corn contains more antioxidants and exhibits
higher antioxidant activity than non-pigmented corn
(Lopez-Martinez, Oliart-Ros, Valerio-Alfaro, Lee, & Parkin, 2009)
