3.3. Water holding properties
Results on water holding properties for the control, PEF
(1.9 kV cm−1) and water bath treated (ΔT 22 °C) beef samples are
presented in Table 3. PEF and water bath treatments did not adversely
affect the water holding properties of the beef when examined including,
drip loss, moisture (%), aw, total expressible moisture and
solid (%). However, PEF treated samples had lower values for drip
loss, moisture and expressible moisture %. This may be attributed to
the greater weight loss observed in PEF treated beef samples which
could have reduced the amount of water expressed.
