In relation to palm kernel extraction, two varieties of the oil palm, namely, ‘Dura’ and ‘Tenera’, are common, and are classified as thick-shelled and thin-shelled fruits, respectively (Hartley, 1977; Opeke, 1997). Prior to cracking, the nuts are dried sufficiently to enable the kernel to shrink away from the shell, to minimise kernel breakage. The nuts are then cracked in a machine or manually.
