The internal protein content of particles prepared with different
calcium concentrations was determined based on the weight fraction,
G, of the pellet of particles after centrifugation of the dispersion.
It was assumed that there was no additional continuous
phase in the pellet. It is also important to note that the volume
fraction as represented was slightly overestimated, as particles
do not reach a volume fraction of 1. Taking into account the total
protein content of the dispersion and the continuous phase, the
internal protein content was calculated using Eq. (1), as shown in
Table 1.
