The banana HMT rice cake showed the highest score for all attributes due to the modification of
the formula. This formula is somewhat higher moisture content than the normal banana cake made from
wheat flour. The color (5.07) and overall (5.77) scores from banana wheat cake were similar to banana

DM rice cake. The banana PGB rice cake showed the overall (6.20) not significantly different (p>0.05)
to the banana HMT rice cake (6.60).
