Anthocyanins extraction from black rice , especially cyanidin and peonidin-3-glucoside, showed an in vitro inhibitory effect on cancer cell proliferation, a high protection of endothelial cells from oxidative stress events and a considerable protection angiogenesis induced by vascular endothelial growth factor, while in vivo protocols using rats have shown that pigmented rice varieties reduce the risk of atherosclerosis and efficiently reduce the total cholesterol, low-density cholesterol and total triacylglycerol contents of rats fed a high-cholesterol diet.
