A meal of polysaccharide carbohydrates (starch and glycogen) is considered the best meal before engaging in a sporting activity. Polysaccharide help provide a steady source of glucose and have the fastest clearance time, typically 1 hour, from the stomach. For comparison, a meal containing both carbohydrates and proteins takes 3 hours to clear from the stomach, and a meal heavy with fats and proteins takes up to 6 hours. A major reason for the fats clearance of carbohydrates is that they do not increase cholecystokinin release, which is a major inhibitor of stomach emptying.
