Konjac glucomannan (KGM) is a water-soluble, viscous dietary fiber extracted from tubers of A. konjac native to China (Khanna & Tester, 2006). It is one of the most viscous dietary fibers known because of its effective water-absorbing ability (Melinda et al., 2010). The viscosity of konjac flour is greater than that of guar gum, which is known as one of the most viscous dietary fibers. As compared with other dietary fibers like carboxymethylcellulose (CMC) and pectin the relative viscosity of konjac glucomannan increases significantly with increase in its concentration in water (Ebihara, et al., 1981).
