Choice of accompanying LB strain was to some degree able to
alleviate the problem of deceased water holding, as seen from the
fact that when a strain (CHCC-10935) producing both aggregated
and threadlike EPS, water holding was improved. This can be seen
as well when the LB strains were combined with an ST strain that
only produced neglible amounts of EPS (CHCC-3048), improved
water holding was seen in the yoghurts were both aggregated and
threadlike EPS was present (CHCC-10935) as compared with only
aggregated EPS (CHCC-5213).
