In Fig. 2, the example of the chromatogram of the extract is given. It is known from the published data that the principal carotenoids in carrots are α, β,and γcarotenes. The peak 1 in chromatograms of the extracts was unambiguously related to αcarotene based on the analysis of the UV spectrum. Peak 2, as the peak of the component with the maximum content in the extract, was related to the βcarotene. Peak 3, which was badly resolved with the second peak, was related to γcarotene by the method of exclusion.
