intrinsic viscosity is one of the most frequently used approaches for
characterization of the molecular weight or degree of depolymerization
of starch molecules and it is concentration independent but,
any exact information on the molecular weight, size or shape of
starch molecules cannot be obtained from intrinsic viscosity data,
mainly as a result of non-ideality of starch molecules in solution
(Harding, 1997).
