The difference between emulsions from proteins and from hydrophobically modified polyelectrolytes
Stable emulsions from oil and water can be produced with the help of many emulsifiers. In order to avoid aggregation between the droplets and possible subsequent coalescence the emulsifiers very often carry ionic groups. As a consequence there is long range repulsive interaction between the droplets. Such o/w emulsions can therefore be diluted with water without phase separation.
