The performance of the heat exchanger in dairy
industry is often hampered due to severe fouling. Optimum
design of heat exchanger for dairy processing
is important to enhance their performance. This is
possible if fouling behavior is predicted accurately. In
this work, the fouling behavior of the heat exchanger
was predicted through a simulation using theory and
principles of fluidd ynamics andheat transfer. From
simulation results, it is quite clear that the complex
fouling phenomenon is the function of the interface
temperature between the fouling deposit and the bulk
fluidand also the shear stress of the fluidon the heat
exchanger surface. The simulatedcon stant Biot numbers
can be usedfor the optimum design of heat
exchanger.
