2.4.2. Color measured with CIELab
The change in color in the kiwi purée was measured with a Minolta colorimeter (Model CR-210, Minolta, Tokyo, Japan) with illuminant D65, 2° observer, in the reflection mode. Kiwi purée samples, approximately 30 g of both the control and pressurized batches, were placed in a 6 cm-diameter plastic dish to a depth not less than 1 cm. The sample dishwas covered to avoid stray light.
