-the ability to diminishthe electrostatic force between two charges separated by the dielectric substance (water in this case)
-manifestation of the electrostatic polarity
-gives water great solvent capacity
-ionic compounds dissociate
(why they are called electrolytes)
-solutes that do not undergo ionization -called non-electrolytes
-sugars, alcohols and oils
