3.7. Thermal properties evaluation by DSC
The thermal properties of the grains of rice that were stored in
the silos equipped or not equipped with exhausters are presented
in Table 3. The onset temperature of gelatinization (To) and the peak
temperature of gelatinization (Tp) of the rice that was stored under
the two different conditions were very similar at each of the storage
periods; however, the conclusion temperature of gelatinization (Tc)
of the rice that was stored for 9 months in silos without exhausters
showed a slightly higher increase than the rice given the other
treatment. Although the enthalpy of gelatinization (DH) increased
when the grains were stored in silos with an exhauster, this increase
was marginally lower after 6 months than the increase
exhibited by the grains that were stored for only 3 months (Table 3).
The highest DH was found in the grains that were stored for 9
months in silos that were not equipped with exhausters.
