The brief cleaning
between batches was an ineffective technique at reducing the
contamination level, whilst the longer lunch-time cleaning break,
however, was more effective as it reduced the end of production
run enterococci prevalence some 3.2-, 4.1- and 1.3-fold for zones
1, 2 and- 3 respectively, compared to just before lunch, and thus
would likely have reduced the levels just after cleaning far more.
However, the prevalence of enterococci on the surfaces of zone 3
was still high confirming that cleaning of these surfaces was
insufficient.
