Browning was evaluated
on the surface of the cubes. For evaluation of whiteness the cubes
were divided in two pieces by the assessors, and the whiteness
evaluated of the interior. The samples were coded by random
three-digit numbers and served at room temperature in randomised
order. The samples were assessed approximately 1–2 h after
preparation at individual speed, on a 15-point line scale, with
end point anchors and intensity rating ranging from low (value
0) to high intensity (value 15). The samples were evaluated in triplicate
in accordance to the true field plot replication, and tested in
two sessions of 5 and 4 samples, respectively. Each session was
separated by a 5 min break.
