Despite some well know biosurfactants, as for example, surfactin produced by Bacillus subtilis , rhamnolipids produced by Pseudomonas aeruginosa [20], mannosylerythritol lipids produced by Candida antartica [21] or succinoyl trehalose lipids produced by Rodococcus erythropolis [22,23], information on the chemical structure of biosurfactants produced by probiotic microorganisms is limited.
