Anthocyanin content is the most important factor in
determining color of orange juices, but self-association
and copigmentation with different polyphenolic substances
can affect shade and intensity of color (Brouillard,
1988). Therefore, absorbance may, or may not, be
correlated with actual concentration. It is necessary to
use a solvent to dilute juice and minimize interference
due to effects of the above cited phenomena
