Sometimes due to drastic drying
conditions, rapid shrinkage of surface tissue occurs but, simultaneously
stronger mechanical stress is generated inside sample
which opposes shrinkage therefore leads to cracking of the surface.
The model was compared with experimental results and relative
percentage error of 3.8% was calculated using Eq. (1), indicating
close fit of model with experiment. Shrinkage up to 35% of its original
radius was observed in potato sample during the entire
process.
