and protective especially for cardiac diseases. The fractionation and speciation of metals in foods are important for understanding its bioavailability, toxicity or growth of living systems. In order to understand healthy and ill conditions,the determination of the total amount of an element in samples cannot give enough information. The effect of oil obtained from repeated frying on magnesium absorption has been investigated [14].
