Tomatowhich is widely consumed as either fresh or processed foodplays an important role in human diet. We have demonstratedthat extracts of some brands of tomato paste sold on theGhanaian markets contain significant amounts ofpolyphenolic and flavonoid compounds capable of quenchingDPPH˙ free radicals. According to this study, a significantand linear relationship was found between the antioxidantactivity and the total phenolic and flavonoid contentsindicating that polyphenolic compounds contributesignificantly to antioxidant activity of the investigatedtomato pastes and can therefore be considered as goodnatural antioxidants source with numerous health benefitsassuming that these compounds are bioavailable whenconsumed
