Pineapple world production reached 21.8 million of tons in
2011 (FAO, 2013), and most of its production is used for processing
as fruits salads, juices, concentrates, and jams. During processing,
large amounts of byproducts, consisting mainly of peel and pomace
are generated, representing about 25–35% of the fruit weight
(Larrauri, Rupérez, & Calixto, 1997). Since most of these byproducts
have no specific destination, they may be inappropriately disposed
causing environmental issues. Consequently, it is of vital importance
to reuse industrial byproducts in order to improve the process
economics and its sustainability.
