Germination led to improvements in the GABA and TPC concentrations
and antioxidant activity of BR. Optimal germination conditions
for accumulation of GABA and antioxidant activity were
obtained after soaking at 28 C for 24 h, followed by germination
at 34 C for 96 h, while the highest TPC was found in GBR obtained
at 28 C for 96 h. BR cv. GO more effectively accumulated antioxidants
with peroxyl-scavenging activity (predicted value 1032 mg
TE/100 g d.m.), while cv. 15 was more effective at accumulating
GABA (predicted value 135.5 mg/100 g d.m.) and TPC (298 mg
GAE/100 g d.m.) under the optimal germination conditions. These
germinated grains with improved levels of bioactive compounds
can be consumed as direct foods or incorporated to staple foods,
and to be offered as preventative food strategies in combating
chronic diseases.
