2.9. Protein gel image analyses
Visualization of images for stained sarcoplasmic and myofibrillar
protein gels from normal and red catfish fillets were conducted
using a VersaDoc imager (Bio-Rad) and analyzed by
PDQUEST software (Bio-Rad). Spots in normal and reddish fillet gels
were detected, matched, and normalized by expressing relative
quantity of each spot as the ratio of individual spot quantity to the
total quantity of valid spots (Sayd et al., 2006). For each spot in a
given fillet sample, spot quantity values in duplicate gels were
averaged for statistical analysis. A spot was considered significant
in differential abundance when it was different (p < 0.05) when a
pairwise Student t test was used (Sayd et al., 2006).
