Around 930 nm, absorption bands are related with the CH2
bond, which is characteristic of fat. Bands at 984, 1452 and
1938 nm are related with OH second overtone, OH stretch first
overtone and OH bend second overtone, respectively, and this is
associated to the water content in the samples. Other bands corresponding
to fatty acids and fat contents are located around
1210 nm, which is related with the CH second overtone; 1726
and 1760 nm, associated with the CH first overtone; and 2308 and 2348 nm, linked with the CH combination tones (Williams,
2001).
