The activity of phenylalanine ammonia-lyase (PAL) was deter-
mined as the method reported (Tanak, Kojima, & Uritani, 1974).
Five grammes of fresh samples were homogenized in 20 ml of bo-
rate buffer (0.1 mol/l, pH 8.0) containing 5 mmol/l b-mercap-
toethanol and 2 mmol/l EDTA.
